St. Augustine’s Newest Coffee Shop Inspired by Japanese Culture

Some coffee shops want to sell coffee, others want to make coffee, and most of the time you can taste the difference. At the newest concept coffee shop in St. Augustine, Address Coffee, you will be greeted by staff who unanimously exude passion, confidence, and craftsmanship; never in a rush to whip out orders, but constantly in a state of intention. Owner Débora Kimie and her husband, Andrew, say that their time spent in Japan, steeped in the impressive native coffee culture, informed the way they view coffee holistically.

The couple have adopted two concepts from their time overseas and imbued them into the make-up of Address Coffee. The first, kaizen, is a cultural concept that emphasizes making improvements throughout the process and being a student of the craft. This shows up in their constant adaption of new modalities in the world of coffee, while maintaining the best techniques. Omotenashi, the unique philosophy of selfless hospitality prevalent in coffee shops throughout the island of Japan, informs the customer experience in Address. Store patrons see their expectations anticipated, met, and sometimes exceeded by the talented staff behind the bar.

The store marks the third business to partner with the Citra Collection, found just outside the city gates north of Fort Mose. After a much-anticipated grand opening, and a recently held latte art competition, Address has received a warm welcome from the locals. Débora recalls, “We were so grateful for the community’s support for our vision and the way we like to serve coffee”. The resounding response since they’ve opened their doors is that you can taste the difference at Address Coffee.
