Stephen DiMare stepped onto the St. Augustine culinary scene in 2010 with his locally renowned popsicle shop, The Hyppo. When a nosy neighbor on an airline flight led Stephen to question his life-long dream of opening a coffee shop in his hometown, he was offered the idea of a popsicle shop instead. While Stephen was originally against the notion, he was sold by the end of the flight, and The Hyppo was born.
In the eight years since, Stephen has become the authority on guilty pleasures in St. Augustine. From gourmet pops to Cousteau’s decadent waffles, there is no indulgence Stephen and his team haven’t perfected. Next up to bat: Mayday Ice Cream.
The concept of handcrafted ice cream came into play three years ago, when Stephen was lamenting the lack of ice cream shops in St. Augustine reflecting the same flavor profiles he had at his establishments. His goal was to bring the same principles from the pop shop into really fun ice cream. Try the Cookie Crush, and you’ll see that they hit the nail on the head! At Mayday, the mission is to take the classic flavors we all know and love, and kick it up a notch. Think of the quintessential cookie or the ultimate rocky road, and that is what you will find.
Since beginning his career in hospitality, Stephen has put an emphasis on creating positive customer experiences. While sampling popsicles can get tricky, sampling ice cream is a tried-and-true method of ensuring customers end up with the perfect flavor to meet their craving. When guests walk through the door, they are immediately able to start sampling. The bold and engaging flavors of Mayday are so intriguing that there is no way to walk past without tasting their Lavender Mélange or Blueberry Toast Crunch. If you still can’t choose, there is always the option for a flight (pun very much intended)!
Local collaborations with Kookaburra and Fiction Donuts have the Mayday team ready to chase newer, bolder successes in the ice cream business. If you’re concerned the team will run out of ways to blow your favorite classics out of the water, not to worry. Rumor has it there may even be a donut-based ice cream sandwich in our futures!
