Vernon’s at Sawgrass Marriott Golf Resort & Spa is hosting its second pop-up vegan dining experience, appropriately dubbed the “Feast for Rabbits.” Taking place on Sunday, June 10 at 5:30pm, this dinner is comprised of a cocktail half hour with specialty drinks and bites created just for the occasion, followed by a five-course, sit-down dinner – a healthy and relaxing way to end the weekend. It’s a perfect event for both seasoned vegetarians and vegans as well as food lovers interested in seeing the amazing potential of all-veggie dining.

THE MENU

“Happy Half Hour”
Carrot Bellinis & Crostini Duo

First Course – Artichoke Arancini
Arancini stuffed with marinated artichokes, served with a black peppercorn aioli

Second Course – “Fresh from the Market” Salad
Large heirloom tomatoes, shaved asparagus, vegan feta, kumquat, creamy leek dressing

Third Course – Tofu Piccata
Lightly pickled tofu, breaded and pan fried, served with roasted fingerlings, crispy broccolini, capers, and a lemon butter sauce

Fourth Course – Carbonara
Bucatini pasta dressed in a creamy vegan egg sauce, tossed with hand-torn herbs, vegan bacon, and blistered tomatoes

Dessert – Chocolate-Orange Cannoli
Orange-infused cannoli, filled with a creamy dark chocolate mousse, topped with orange mint salad
